Ossau Iraty cheese comes from the Basque Country and Béarn, between the Pic du Midi and the Iraty forest. This 4.4kg wheel uses ewe’s milk from local breeds such. Its PDO label sets strict rules for its origin and its method of production.
This cheese matures for 120 days, which supports the growth of mild, fruity aromas. The texture is firm, white and smooth, with an creamy mouthfeel that melts gently. Subtle nutty notes may appear as the rind forms and the body becomes stable.
Ossau Iraty cheese makers follow a seasonal cycle, as ewes give milk from November to July. They heat the milk, form the curd and press each wheel before the long ripening. The rind carries an embossed ewe’s head, a clear mark of genuine Ossau Iraty.
This cheese pairs well with black cherry compote or a chutney with Espelette chilli pepper. It also works melted in a gratin or warm sandwich.
