Elizaldia whole boneless Bayonne ham (Jambon de Bayonne IGP) is produced in Gamarthe, in the Basque Country, by Ferme Elizaldia, a family-run producer renowned for its care and attention to quality. Made from Basque pork from Gamarthe, Ainhice Mongelos and Lohitzun breeds and raised on Elizaldia’s farm under the PGI Bayonne Ham label, this dry-cured ham follows strict production standards from breeding to salting and ageing. 
Each ham is weighed, individually numbered, and salted with PGI Salies-de-Béarn salt, then cured and aged to match its specific weight (around 12 months), allowing time for the flavours to mature naturally. The result is a tender, well-balanced ham with a subtle sweetness and a smooth, savoury finish. The fine marbling gives it a delicate texture that melts gently on the palate. 
Awarded a Gold Medal at the Paris 2025 competition, Elizaldia Bayonne cured ham reflects the excellence of pork farming and curing in Southwest France. 

Serve thinly sliced with pickles, fresh vegetables, or melon, or pair with cheese and charcuterie for a simple yet balanced platter. 

It can also be cooked on both sides to accompany piperade, warm vegetables, or added to dishes like tartiflette, omelette, or pizza for extra depth of flavour. 

Storage instructions
Store between 0 and 8°C, away from moisture and light, in its original unopened packaging.
Once opened, keep wrapped in a clean, dry cloth or cling film, and store in the vegetable drawer of the refrigerator.
