This pepper stew is prepared with finely chopped veal, Espelette pepper, and white wine, following the region’s classic version of Axoa, long associated with local fairs and family gatherings.
Prepared by Ferme Elizaldia, a family-run farm dedicated to sustainable livestock rearing and regional recipes, this dish features French veal sourced from the Basque Country, known for its quality and rich flavour. The meat is slow-cooked with sweet red peppers, onions, and mild Basque spices, while the Espelette chilli pepper adds a gentle warmth that enhances the natural taste of the veal.
In Basque, axoa means “minced” or “chopped,” referring to the stew’s tender, meaty texture and velvety sauce. Best served warm with potatoes or rice, it offers a satisfying and balanced meal for 3 to 4 servings per jar.
