Produced in Gamarthe, a village in the Basque foothills, this dish embodies the region’s love for slow-cooked, pepper-rich recipes.
The pork used in this axoa comes directly from Ferme Elizaldia, where the animals are reared on the family farm following the strict guidelines for PGI Bayonne ham, ensuring high-quality meat with exceptional flavour and texture. Combined with red peppers, onions, and gentle Basque spices, the result is a smooth, savoury stew with balanced warmth and a subtle hint of sweetness.
In Basque, axoa means “minced” or “chopped,” reflecting the stew’s tender texture and rustic character. Each jar serves 3 to 4 portions, ready to be enjoyed warm with potatoes or rice to soak up the rich sauce.
