Elizaldia navarin of mutton is a slow-cooked stew (ragout) inspired by the French classic navarin and prepared in the Basque Country with a regional twist. The dish features tender pieces of French mutton simmered in red wine with carrots, onions, mushrooms, piquillo peppers, and a touch of Espelette chilli pepper for gentle heat and depth of flavour.
This rich and aromatic stew balances the earthiness of French mutton with the sweetness of vegetables and the warmth of red wine. Its smooth, velvety sauce coats each piece of meat, offering a comforting and well-rounded dish.
The Navarin printanier, traditionally made with spring lamb and new-season vegetables, inspires this version that can be enjoyed all year round. Simply heat in a saucepan until hot and serve with mashed potatoes or seasonal vegetables.
