Basque Country One-Pot Casserole 
Elizaldia lentils with confit sausages is a hearty one-pot casserole inspired by regional French recipes and prepared in the Basque Country. It combines green lentils with confit sausages made from pork meat raised on Elizaldia farm, where pigs are reared under the IGP Bayonne ham label, ensuring strict breeding standards and quality meat. 
The dish features slow-cooked lentils simmered with pork belly (ventreche), onions, carrots, tomato, and aromatic herbs. The confit sausages bring a rich, savoury depth, while a Basque twist of Espelette chilli pepper and red chilli adds gentle heat and balance. The result is a well-rounded, comforting dish with a thick, flavourful sauce that coats the lentils beautifully. 
Easy to prepare, simply heat gently in a saucepan and serve as a complete meal. Each tin serves 3 to 4 people, making it perfect for a quick satisfying dinner that celebrates the flavours of Southwest France.
