This farmhouse terrine is produced in the Pays Basque in southwest France, where Elizaldia farm raises its own pigs. The meat comes from pigs reared for IGP Bayonne hams, which gives the terrine a clear link to the land, the farm, and its long-standing know-how.
The recipe has been part of Elizaldia since the beginning and continues to be prepared with the same family approach today.
The texture is firm yet spreads easily, making it pleasant to use on fresh bread.
In flavour, pork liver leads, followed by gentle garlic and black pepper, while a touch of red chilli adds warmth without taking over.
How this farmhouse terrine is made:
Pork fat, liver, and lean meat are finely chopped directly at the farm. They are then seasoned with salt, pepper, garlic, and red chilli. Finally, the mixture is slowly cooked to preserve structure and flavour.
