Confit in Pork Fat from the Basque Country
Discover Elizaldia confit pork, prepared in the Basque Country using pork from the same pigs selected for the IGP Bayonne ham. These pigs are raised under strict breeding standards, ensuring traceability, balanced feed, and respect for animal welfare, all essential to the quality and flavour of Elizaldia’s pork.
This confit is made from deboned, rindless pork loin (rôti de porc), cut into generous pieces and slowly cooked in its own fat. It’s similar to a slow cooked pork belly where the fat has been removed. The result is tender, flavourful meat with a delicate balance of richness and depth.
Each tin contains pieces of confit pork in pork fat, ready to enjoy hot or cold:
Hot: warm the confit in the oven for around 20 minutes and serve with sautéed potatoes or seasonal vegetables.
Cold: slice and serve with a fresh salad for a lighter option.
To serve, open both ends of the tin and push the confit out. The pork fat can be kept for cooking, perfect for enhancing roasted vegetables or sauces.
Once opened, store in the fridge between 2°C and 8°C and consume soon after.
