Each calisson is made from finely ground almonds, candied melon and orange peel, and sugar, blended into a smooth paste. The flavour is gently sweet, with soft marzipan notes balanced by light fruit freshness. The texture stays tender and slightly firm, while a thin layer of royal icing adds a clean sweetness and a smooth finish.
The paste is rolled, cut into its oval shape, iced, then slowly dried at low temperature. This careful process allows flavours to settle without drying out the centre. The result is consistent, balanced, and easy to enjoy.
