Chaource from Lincet is a creamy treasure from the Champagne–Ardenne region in France, made with gentle thermised cow’s milk, a lower-heat treatment that keeps more of the fresh milk’s flavour and character intact. From Fromagerie Lincet, this soft-ripened cheese matures for at least two weeks, developing a tender, velvety interior encased by a pure white bloomy rind. Its texture is silky and indulgent, and the flavour profile is delicately tangy with soft notes of fresh cream, subtle earthiness, and a hint of mushroom.
Awarded PDO status (Protected Designation of Origin or Appellation d’Origine Controlee in French), Chaource embodies centuries of cheesemaking excellence. Best enjoyed at room temperature and served on a cheese board or why not thinly sliced Chaource and baked on top of andouillettes for a true French delicacy.
