Bleu d’Auvergne comes from the Auvergne region, known for its rich dairy pasture. This 125g portion carries a PDO label. PDO means Protected Designation of Origin, which sets rules for its place and method of production. Its 28-day minimum maturation supports the growth of Penicillium roqueforti, which shapes its blue veins and deep flavour.
This cheese has a melting, smooth and creamy texture, yet it can also feel slightly crumbly. The taste is intense, with notes of blue cheese and mushrooms. A light touch of salt and bitterness may appear, depending on the degree of ripening.
During the cheese making process the curd is pierced to let air reach the interior. This step supports the development of blue veins as the Penicillium roqueforti grows. The cheese then matures in cool cellars, where its aroma and texture slowly evolve.
