Produced in the high mountain areas, this hard cheese is made from unpasteurised milk of Tarine or Abondance cows, known for their rich, creamy flavour. Beaufort is a PDO (Protected Designation of Origin) cheese, ensuring that it is made according to traditional methods in the designated production zones of the Savoie region.
Beaufort is a pressed cooked paste cheese with a smooth, thick rind that ranges from ivory to a soft yellow. Its distinctive concave shape, often referred to as the “Son of the Alps,” was originally designed for easy transport down mountain paths.
With a minimum ripening of 5 months, Beaufort boasts a fruity and floral flavour (sometimes compared to Comte cheese) that’s subtle yet full of character. It’s perfect for enjoying on its own, or try it in a fondue, soufflé, or pasta bake. Available year-round, this cheese is ideal for every season, with variations between summer and winter production.
This large 3.5kg piece is great for professional cooks, catering or large events.
